Hey y'all. I realize that so many people are stuck at home. So, here's an easy recipe that reheats easily, freezes, and makes a ton, if you need it. Taught to me by my mother, and made at every crisis point I've ever been in. I remember this recipe being thrown into action when one of my dear friends died in a car accident. My mother rushed to her best friend's house and starting ordering people to cut this, and dice that, and people were more than happy to comply. Sometimes, we all just need something productive to do. A purpose. A task. Something useful. Helpful. This stew is easy. And, you can change it in any way you want. Most of the ingredients are canned goods, which is fantastic.
Here goes -
2 cans chicken broth
1 lb hamburger meat
Diced onion
5 or 6 potatoes, cut up and peeled
Carrots - cut up
1 can corn, whole kernel
1 small can cream-style corn
1 or 2 cans veg-all
1 small can tomato sauce
Frozen okra or 1 can kitchen-sliced green beans
Bring broth, carrots, potatoes, and onions to a boil, and cook until tender.
Cook hamburger meat separately & drain. Seasoning salt, and pepper meat.
Cook okra separately, drain & wash.
Add hamburger & okra to broth/potato mixture.
Add canned goods.
And here's the part where the recipe gets, well, you know those people...
"till it suits you."
"Add garlic, salt & pepper to taste."
I hope you get some enjoyment out of this recipe. I've eaten it for years. It's so good with some cornbread, or crackers. It almost tastes better reheated. You can make this Whole30, Paleo, and I'm sure you can do it without the meat. Now, I'm really wanting some...
